Vicky’s Chocolate Sheet Cake Recipe

Hey!

In addition to the many sweet benefits I’ve received from having a daughter-in-law, I’ve also received an unexpected one: a wonderful chocolate sheet cake recipe from her mother.  I don’t have a great track record with making cakes and I was in need of a recipe.  Vicky came to my rescue.  Along with the recipe, she sent this note; “It is a very easy cake and everybody loves it!”  She is absolutely right.  The cake is devoured at my house.  Enjoy!

Vicky’s Chocolate Sheet Cake

2 cups self-rising flour

2 cups sugar
2 sticks butter or margarine, softened

1 cup water
3 heaping Tbsp cocoa

1/2 cup buttermilk
1 tsp vanilla

2 eggs, beaten

Mix flour and sugar in bowl and set aside. In saucepan, place butter or margarine, water and cocoa and bring to rolling boil until the butter melts. Pour this over the flour/sugar mixture. Blend well. In small bowl, add buttermilk, vanilla and eggs. Mix together. Pour into 13 x 9 greased pan and bake for 30 mins or until test done. Pour icing over hot cake.  Add halved or chopped pecans, if desired.

Icing:

1- 1 lb box (4 1/4 cups) of confectioners sugar, sifted
1 stick butter or margarine, softened
3 heaping Tbsp cocoa
1/4 c. whole milk
1 tsp vanilla

Sift confectioners sugar and set aside. In saucepan, melt butter over low heat with cocoa and milk. DO NOT BOIL!!! Pour over confectioners sugar: mix well. Pour over hot cake as soon as it comes out of the oven. Sprinkle with chopped pecans, if desired.
