Her First Loaf of Bread

My daughter, Catie, has conquered the academic world but we’re still working on conquering homemaking.

Her first foray into the world of cooking was to attempt a loaf of quick bread.  I might have suggested something a little easier but she picked out a basic recipe and wanted to try it.  We renamed and claimed it because she altered the recipe by adding the butter, rosemary, and cheese.  She’s an ambitious one.

When her loaf came out of the oven, she was so proud and I was proud for her.  And I must say, the loaf was very moist and delicious.  I think you’ll enjoy it, particularly with vegetables fresh from the garden.

1-1/2 cups of all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1 cup of milk
1/4 cup of melted butter
2 Tablespoons of fresh rosemary ( save some for garnish on top)
1/2 to 1 cup of shredded cheddar cheese ( save some for garnish on top)

Preheat oven to 350 degrees. Grease a medium loaf pan.  Stir together all dry ingredients {flour, powder, salt, rosemary, and cheese} in a bowl.  Whisk together milk, butter, and eggs in a separate bowl.   Add wet ingredients to the dry ingredients.  After fully combined together, pour into the pan, and add the reserve rosemary and cheese on top.  Baking time: 30 minutes.

What have you baked lately? Any recipes you’re willing to share?
