A Slice of Life: April

A Slice of Life: April
Hey!
Bringing you a snapshot of happenings in my world over the last couple of weeks.
New finds from thrift stores:  I think this Drexel dresser walked off the showroom floor into the thrift shop and then walked out and over to my house.

A few other finds…
Over the weekend, I directed the beautiful outdoor wedding of my next door neighbor’s daughter.  I’m not sure who did her flowers but my neighbor refinished those backdrop doors.

The colors were so delicate in the bouquets.

The guest registry table…

My neighbor made all of these teacup lights.  The center of the flowers had a battery tea light and a glove with a spoon helped the cup hang from the hook.

Honey Do installed a new dishwasher.  Replacement parts were no longer available for the old one.  Why is it appliances die after 18 years?  Shouldn’t they last a lifetime?!

This cabinet is getting an overhaul but you’ll have to wait for a final reveal.

We tried out Edie’s Honey Garlic Pizza and homemade crust. Very tasty!  Click here for the recipe.

And last but not least, I started leading a new bible study on  Covenant  by Kay Arthur.  I did the Precept Covenant many years ago and loved it.  This workbook format is just as good.  I highly recommend it.  The understanding of covenant is so foundational to the Christian faith but rarely preached.

Now that you’ve seen what I’ve been up to; what’s going on in your neck of the woods?

Blessings,

Mimi

Constant Companion

Constant Companion
Hey!
She was my constant companion for almost fifteen years.  She nuzzled her way into my cat-lovin’ heart.  And as all good sheepdogs do; she herded, guarded and watched over me (and everything else) faithfully every day.
Meg was gentle and never met a stranger in human or animal form.

My daughter and Meg: 2002

In the early days, she caught Frisbees and tennis balls for hours always wearing me out first.  And she invented a game of rolling the tennis ball with her nose to the exact spot of the pool where the jet was located; she would then, push the ball into the pool at that location and the jet would carry the ball out to someone to throw it for her.  Meg had us trained!
The craziest thing Meg ever did was eat a sweet gum ball as a puppy which lodged in her esophagus.  Whatever possessed her to eat such a prickly thing, no one knows?!  Meg also had a passion for popcorn.
As she aged, breathing became labored which I talked about in the fall, here.  We thought it was her heart but Meg had a mass in her right lung and arthritis in her hips.  Living became hard and painful for her.
We had a good last day together filled with sunshine.  I imagine her now busy herding all the sheep of God’s pasture.
Blessings,
Mimi

Prayers for Boston

Prayers for Boston

When spoken words are not enough;

“…For the LORD comforts his people and will have compassion on his afflicted ones.”
Isaiah 49:13b NIV Bible

When words for prayers don’t come;

“In the same way, the Spirit helps us in our weakness.  We do not know what we ought to
pray for, but the Spirit himself intercedes for us with groans that words cannot express.
And he who searches our hearts knows the mind of the Spirit, because the Spirit intercedes
for the saints in accordance with God’s will.”
Romans 8:26,27  NIV Bible

My thoughts and prayers are with all who have been impacted by the tragedy in Boston.

Spanish Moss and Sin

Spanish Moss and Sin
Hey!
Spanish moss.  Have you ever seen it?   Maybe you’ve even bought it at your local craft store for projects.  We have it all over the place where I live.  I’ve always found it a bit creepy particularly in the winter.
Spanish moss doesn’t typically harm the trees but can smother the leaves so they don’t get sunshine.  Birds and wind carry it from tree to tree transplanting it and the moss seems to like certain types of trees to take root in more than others.

During Lent and into Easter, I kept passing this dogwood tree while driving to and from town and something about the contrast of the dogwood blossoms and the moss made me think about sin.

A dogwood blossom has a story attached to it.  As the story goes, the four corners of a dogwood flower represent the four points of a cross, the rusty tips of the blossom represent the nails and the red berries represent the blood of Jesus.

When I look at this tree, I see the dogwood representing a Christian on their journey with Christ and the moss as the sin that can so easily entangle.  I see myself represented.  A person forgiven and cleansed by the blood of Jesus Christ but a person who still struggles all the same.  The “moss” still hangs on in some areas.  In fact, I can hide it as this moss will be hidden when the leaves turn out but its still there.  Isn’t that like us?  We want to present a beautiful picture to the world even though we’re hiding the things about us that are ugly, creepy, sinful.

Sometimes, my choice to sin affects others and like the moss carried by the birds or the wind can take up residence in another tree so my sin also has an impact on others.  I can infect them with my attitudes and behavior.

And like the moss that can rob a tree from its vital sunshine, if I’m not careful in my walk with Jesus, I can find sin carrying me away from His vital light.   In 1 John 1:5-7,  the Bible says,

“…God is light; in him there is no darkness at all.  If we claim to have fellowship with him yet walk in the darkness, we lie and do not live by the truth.  But if we walk in the light, as he is in the light, we have fellowship with one another, and the blood of Jesus, his Son, purifies us from all sin.”

Spanish moss and sin might seem a strange pairing but the visual imagery resonates.
Today, I hope to make more mindful choices and remove some of the “moss.”

Blessings,

Mimi

Shrimp and Sausage Pasta

Shrimp and Sausage Pasta
Hey!

I don’t know if you’re like me, but some days when that 5pm hour comes around I don’t have a clue what to make for supper.  Nothing seems to sound good and other things take too long to cook.  On those days, I’m really looking for something quick because honestly, the real problem is I’m tired, worn out and can’t think.

This recipe is one that I made up and has my family’s seal of tasty approval.  It’s also really easy to multiply or change ingredients.

Shrimp and Sausage Pasta
1 box of fettuccine noodles
1 pound of raw shrimp, peeled and deveined
1 package of Hillshire Farm Polska Kielbasa sausage, cut into 1/4″-1/2″ slices
1/2 cup chopped onion (optional)
1 tsp of minced garlic (optional)
1 cup of pre-made fettuccine alfredo sauce
1/2 cup of frozen peas
Grated Parmesan and/or Romano to put on top
Cook the pasta according to the package.  During the last minute of the pasta cooking, add the 1/2 cup of frozen peas.  Drain, but do not rinse the pasta once done.  Keep warm.  You can add a small amount of olive oil so the pasta doesn’t stick together.
Put the sausage in an iron skillet and cook until the sausage is lightly browned.  Remove the sausage and let it drain on a paper towel lined plate.  Keep warm.  Drain most of the grease from the skillet but leave about a teaspoon for flavor.
Next, add 2 TBSP of butter to the skillet and melt it while mixing it with the sausage grease.  Add the onion and garlic.  Cook until tender. You might need to add a little extra butter or olive oil.  Once melted, add the shrimp.  The shrimp will cook quickly- only a few minutes.  Once done, reduce heat to low and add the cup of pre-made alfredo sauce until its all heated.
Put the shrimp, sausage and pasta into a big bowl and toss together.  Sprinkle with the grated Parmesan.
Serve with french bread and a salad.  I think the recipe serves about 4-6 people.
*Disclaimer*— I did my best to be accurate with measurements but I don’t measure when I cook this recipe. I just throw it in and see how it looks.

Other suggestions:
*Sometimes I substitute the sausage for bacon.
*You can omit the alfredo sauce and use a little extra olive oil when its mixed together.  The taste is a little different but just as good.
*Increase or decrease any of the ingredients to fit your servings needed.
*I, typically, use frozen raw shrimp and I like the jumbo ones, but I’ve used the pre-cooked shrimp to save time.  Just be careful to heat it just to get flavor and avoid overcooking it.
*use butter not margarine -tastes better.
I hope you enjoy it!!
Blessings

A Little Bit of Springtime

A Little Bit of Springtime
Hey!

I’m tied up for the next few days with Doodlebug.   She is taking the MCAT on Thursday.  Please send a big prayer upwards for her.  She would REALLY- I mean, REALLY, REALLY, love to only take it one time.   Bless her heart, she has been studying like crazy in addition to her regular schoolwork.
In the meantime, here’s a little bit of springtime from my house to yours.
I’ll be back next week!!
Blessings,
Mimi
